Organic Crispy Rice
Your gluten-free alternative to Snap, Crackle & Pop!
Gluten free snacks are hard to come by especially if you have to avoid dairy too! That's the predicament that I'm in with my eldest son, and unfortunately most of the easiest snack items contain either gluten or dairy or both.
I'd been thinking about snacks that I could make and decided I'd try rice crispy squares. They're made with rice cereal so they must be okay, right? Wrong! Rice Krispies actually contain barley malt for flavoring, and barley malt contains gluten.
Then I caught sight of Organic Crispy Rice by Nature's Path in the cereal aisle of our local natural and health food store. I couldn't believe my eyes, right there on the front label were the magic words Gluten Free. I bought some and headed straight home to make rice crispy squares!
Of course rice crispy squares for my son would require a couple of substitutions:
- First, I made sure I had gluten free marshmallows (they can have gluten in them too). Then, I substitution expeller-pressed coconut oil for margarine or butter in order to be sure my squares were dairy free as well.
- Using equal amounts of coconut oil for margarine, I basically made up my own allergy-friendly rice crispy squares recipe.
The squares were a hit!
Now, we did and do use this cereal as breakfast cereal. It's not as sweet as traditional rice Krispies; however I don't find that's a drawback at all. My son really enjoys them with either soy or rice milk.
So, if you are avoiding gluten, your options at breakfast just got bigger and crispier!
