Fluffy Morning Goodness from Arrowhead Mills

Do you miss pancakes? When we found out that our son had gluten allergies, and we wanted to eat as much like him as possible, we tried a number of pancake mixes. While some were okay, we didnt find a substitute that we liked as much as wheat-flour pancakes.

Then we tried Arrowhead Mills Gluten Free Pancake and Baking Mix. While this mix can be used for muffins, weve only ever used it to make pancakes; which I might add have become my sons favourite although his father is still pining for crepes.

The first time I made Arrowhead Mills pancakes, I followed the recipe according to the package. We found that the pancakes were a bit too heavy, and decided we needed to use more liquid for a bit more fluffiness. While the pancakes were tasty enough; they were quite small and very dense. After a couple of experiments, I adjusted the directions adding 1 cup of liquid instead of a mere cup. While that might seem like a drastic adjustment in the directions, it gives a much lighter and thinner pancake with a very nice texture and it almost satisfied my husbands craving for crepes.

We also found the directions resulted in a pancake that was a bit too sweet for our palates. In our home, we dont eat a lot of sugar, so, I ended up dropping the requirement for a tablespoon of honey from the directions as well.

Now, Arrowhead Mills pancake mix is completely gluten and dairy-free, but the ingredients do contain corn. If youre avoiding all grains, or have corn allergies in your home, this mix is not for you. You may also find Arrowhead Mills mix a bit expensive; however, in my experience and considering what the other mixes taste like, Arrowhead Mills mix is well worth a few extra dollars!

The directions for Arrowhead Mills muffins look as easy as the directions for the pancakes - with one minor exception. The Arrowhead muffin recipe calls for a tablespoon of xanthan gum. If youre on the hunt for this ingredient, youll likely have to go to a health food store or a bulk store to find it. Personally, the difficulty I have finding exotic ingredients like xanthan gum is one reason why I avoid certain recipes. However, if you live in an area where exotic health food and specialty stores abound, you might find that Arrowhead Mills is the perfect muffin mix to satisfy your gluten cravings!
I can tell you that nothing else has compared to Arrowhead Mills for pancakes!
