Corn Bread by Glutino
Toasts up Light on your Tummy!
Is your family dealing with gluten allergy or intolerance? Perhaps you have a person in your home that has been diagnosed with celiac disease. Well, have I got good news for you, and it comes in the form of a loaf of gluten free corn bread!
We've struggled with gluten-free breads for a long time, and we found that most were "heavy" in texture and a bit too "moist" to toast well. Our son ate and liked these breads, but it was tough for us (who have committed to eat as much like our son as possible). Couple the heavy texture of these breads with the fact that many loafs come frozen and should remain frozen until ready to eat- needless to say you end up with toast that's heavy enough to seriously hurt someone and rubbery enough to make you call into work with a case of lock jaw.
Now, we do have foods in our home that are specific to a family member. My husband does eat wheat crackers and his favourite Dutch cheeses. I do indulge in the odd item that contains dairy too, but we've always wanted to keep that to a minimum, so that our son, Michael, would see that others could eat like him and suffer no deprivation. However, the gluten-free breads were so bad that my husband was ready to abandon eating like our child, even if it did mean having to explain about what was "Michael's bread" and what was "papa's bread".
Enter Glutino allergy products - especially their gluten free breads. They've been a saving grace for us. Glutino Corn Bread toasts up light and is much closer to the texture of the traditional wheat-flour breads. Now that being said, no one will be fooled by it, but it's tasty and pleasant to eat as opposed to some brands of gluten-free bread. In addition, the Glutino line of breads (including a rice bread and a rice with fibre bread, which I'll review in later columns) are often dairy-free, although you do have to read the labels. The corn bread actually has some skim milk powder in it, so it won't work for those with significant dairy allergies.
Glutino Corn Bread is vitamin-enriched, which is helpful if you have picky eaters in the house. While the price of this allergy product will likely make some folks cringe, it's pretty much in-line with the cost of other gluten-free breads. In our opinion, a painless jaw is well worth the money.
